Green Cookies


I'm pretty late on the St Patty's Day bandwagon to be posting this recipe! I made these cookies ages ago but never got around to posting these pics. The kids I keep loved these - we had a blast working with the green dough, and I cut way down on the butter/sugar so they're not too crazy sweet.




I modified this recipe to make these yummy green sugar cookies.

Ingredients:

  • 1 cups softened butter
  • 1 cups white sugar
  • 4 eggs
  • 4 cups white all purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • Green food coloring



In bowl combine sugar, butter and eggs until smooth. Add 20 drops of green food coloring, mix well. Stir in the flour, baking powder, and salt.


Cover and chill for at least 1 hour. Preheat your oven to 400 degrees. Roll out dough on floured or wax paper lined surface. The dough should be 1/2 to 1/4 inch thick. Find your cutest cookie cutters and get to work!


I kept half my dough in the fridge while I worked with the other half. The colder the dough is during the rolling and cutting, the better.


I baked the cookies on wax paper - they don't need long, just 6-8 min depending on the size. 


These were baked for 7 min - you can see the little ones are getting crispy and the bigger stars are still a bit soft in the middle. I'd rather have a soft cookie, but the tiny ones were perfect snacks for the teething baby I hang out with.
