Gluten Free Lemon Blueberry Cakes

My sweet mom is allergic to gluten, so I grew up with a variety of creative ways to eat around an ingredient that is in a surprising amount of recipes! This is a really simple recipe, as it uses GF cake mix, but feel free to substitute any plain GF cake recipe. I made these as a breakfast surprise for my mom, who absolutely loved them.

Pool Day and Ferngully - Weekend Update

We had such a crazy fun weekend! It was lovely weather here in Jackson, not the sweltering, muggy mess that can be the summer months. It was still plenty hot, so when our family friends spent the night at our house, we decided to take a trip to the pool!

As you can see - it was a blast. I seriously adore saltwater pools. My sweet sister Emma is really allergic to chlorine, so it's always an extra fun time when we go swimming in salt water.

I love the sneaky baby feet hiding in the back of this picture! After swimming, we were all starving and exhausted, so Emma and I whipped up some homemade pizza bagels and we watched Ferngully. Our elementary/Jr High school aged friends had never seen it, and we had to remedy that right away. Gotta love Netflix instant. 

Ferngully was a favorite of my siblings and mine growing up. All three of us have the bat rap memorized. The animation is dated, but the message and story are totally still relevant and enjoyable, as proved by our young friends who loved it! It's funny to look back and think how much influence things like a movie can have on your life. Emma and I talked about how movies like this one, "Once Upon a Forest", and books like "The Lorax" and "Hope for the Flowers" have very much shaped the environmentally conscious, nature-loving semi-hippies we are today. (It probably also helped develop by thing for bay guys, as you cannot best Tim Curry as an awesome villain, even if it's just his voice over!)

Frozen Blueberries

What is more delicious than frozen blueberries? I submit that there isn't much that falls under that category. Just pop some berries in the freezer, and you have an easy, chilly hot-weather snack. They're cheaper, healthier and more convenient (not to mention less messy) than popsicles, making them the 1# treat on my list for a hot summer day. What are you waiting for? Go get some blueberries!
