Here's my little take on the Sweet potato dumplings recipe by Perpperidge Farm's Puff Pastry. The original recipe can be found here.
First, I set out my puff pastry sheets to thaw.
I peeled and chopped up two (small) sweet potatoes from our awesome Mississippi Farmer's Market. I try to make it there as often as I can, and usually end up going about every other weekend. Such an amazing community of people with some excellent produce and products.
After dicing them, I threw them in the oven for about ten min with some olive oil, to start the roasting process.
After they had cooked to a golden brown, I combined the sweet potato with feta cheese, minted garlic, honey, and black pepper.
Next, divided one sheet of pastry into six. I saved my other sheet to make pizza with later. I've been trying to be economical with my ingredients as I'm mostly just cooking for me!
Spooned the sweet potato mixture onto the puff pastry, wrapped it up tight, and tossed it in the oven!
I can't even tell you how yummy these were. It was so fun to splurge a little and use puff pastry for a recipe, and this was so worth it! The sweet potato held it's cubed shape and the flavor was so amazingly savory and delicious. I'm definitely making these again the next time I host a party! These would make delectable appetizers.
